WHY, MUFFINS, WHYYYY???!!! Every single time.... burnt on the outside, mushy on the inside! Could my oven be hating on me? Could it be the muffin pan itself? Maybe the result of too much modifying the recipe? (started w/ a basic almond flour muffin, then monkeyed around with the receipe a lot). Should I lower the temp from 350 to..... ?? Ugh. Help.
The good news is that they taste great and we are enjoying eating out the middles with a spoon
